Fried Chicken Steak with Lemon Butter Sauce:
Ingredients
Chicken breasts 2 cut into halves to make 4 fillets
Baking powder ½ tsp
Soy sauce 1 tbsp
Vinegar 1 tbsp
Coarsely ground black pepper 1 tsp
Crushed red pepper 1 tsp
Garlic powder 1 tsp
Onion powder 1 tsp
Salt ½ tsp
Ingredients for Coating
Flour 1 cup
Eggs 2 beaten
Ingredients for Lemon Butter Sauce
Butter 2 ounce
Chopped garlic 1 tsp
Flour 2 tbsp
Chicken stock 1 cup
Lemon juice 2 tbsp
Salt ¼ tsp
Chicken powder ½ tsp
Black pepper ½ tsp
Finely chopped parsley 1 tbsp
METHOD
Marinate chicken fillets with all the ingredients, also add in soya sauce, vinegar, beat eggs, in another plate spread flour, coat each fillet in flour then dip in egg, again spread in flour and shallow fry in fry pan till light golden.
METHOD FOR SAUCE
Heat oil, fry garlic, add flour, cook for 1 min, add in stock, stirring continuously so that no lumps are formed, add lemon juice with all the remaining ingredients, when sauce starts to thicken, remove from heat, serve with fried chicken steaks.
Chili Garlic Wings:
Ingredients
Chicken wings ½ kg
Eggs 2 beaten
Salt ½ tsp
Black pepper ½ tsp
Oil for deep frying
Ingredients for Seasoned Flour
Flour 1 cup
Salt and pepper ½ tsp each
Crushed red pepper 1 tsp
Garlic powder 1 tsp
Oregano 1 tsp
Chicken powder 1 tsp
Ingredients for Sauce
Dark soy sauce 3tbsp
Butter 1 ounce
Chopped garlic 1 tbsp heaped
Crushed red pepper 1 ½ tsp
Chili garlic sauce ¼ cup
Water ¼ cup
Vinegar ¼ cup
Garlic powder ½ tsp
Black pepper ½ tsp
Sugar 4 tbsp
METHOD
Coat wings in seasoned flour, then in beaten eggs, again seasoned flour, and fry in butter and oil, put fried wings in an ovenproof dish, pour the prepared sauce over the wings, bake on 180 D for 30 mins.
METHOD FOR SAUCE
Heat butter in a pan, sauté garlic, add in all the ingredients and boil for just 1 min, pour over the wings and bake.
Chocolate Cake Shots:
Ingredients for Cake
Flour 1 cup
Caster sugar 1 cup
Cocoa powder ½ cup
Baking powder ½ tsp
Baking soda 1 tsp
Salt ¼ tsp
Egg 1 large
Hot coffee ½ cup
Buttermilk 6 tbsp
Yogurt 2 tbsp
Vegetable oil 6 tbsp
Vinegar ½ tsp
Vanilla 1 tsp
METHOD FOR CAKE
Sift all the dry ingredients together. Beat oil, sugar, egg, essence well, add in dry ingredients, finally add all the remaining ingredients, pour batter into well greased loaf pan, bake on 180 D for 30 mins, remove, cool and keep aside.
Ingredients for Chocolate Filing
Milk chocolate chopped 300 gm
Cream cheese cubes 6
Milk powder 3 tbsp
Tetra pack cream ½ cup
Whipped cream ½ cup
Ingredients to Soak the Shots
Milk ½ cup
Condensed milk 4 tbsp
Milk powder 1tbsp
Ingredients for Topping
Milk chocolate chopped ½ cup
Cream 100 gm
METHOD
Cut the cake into small chunks, put in the base of shot glasses. Prepare filling by heating cream and milk powder in a sauce pan, whisk till milk powder dissolves, pour hot cream over chopped Cadbury chocolate, mix well, cool the ganache in the fridge for 30 mins, remove from fridge, mix in cream cheese cubes and start beating the ganache with electric beater till fluffy, fold in whipped cream and continue beating. Now pipe out layer of milk chocolate filling over cake layer in short glass, repeat layer of cake and then filling. Finally melt together cream and milk chocolate for topping and pour as final layer in all glasses, decorate with a cube of milk chocolate.
