Mutton Masala :
Ingredients:
Boiled mutton ½ kg
Ginger garlic 1 tbsp
Star anise 2
Cardamom 4
Cumin 2 tsp
Fennel 1 tsp
Whole coriander 1 tsp
Cloves 4
Onion 250 grams
Red chili powder 2 tsp
Salt 1 tsp
Turmeric 1 tsp
Coriander powder 1 tsp
Tomato 250 grams
Yogurt 250 grams
Butter 50 grams
Oil ½ cup
Tomato paste 2-3 tbsp
Ginger Garlic paste 1 tbsp
Water 2 cups
Salt ½ tsp
Green Chillies 4-6
Green coriander ½ bunch
Method:
• In a bowl marinate mutton with yogurt, tomato paste, ginger garlic paste and salt.
• After this, in a separate pan add all whole spices and roast these in oil.
• In a bowl add tomatoes, turmeric, coriander powder, red chili powder and salt.
• Take these ingredients out in a bowl.
• Add these ingredients into the mutton pan when mutton turns tender.
• Leave it on dum for 5-10 minutes and then serve.

Tamatar masala kaleji:
Ingredients:
Chicken liver ½ kg
Tomato 250 grams
Onion 1
Mustard seeds 1 tsp
Curry leaves 6
Ginger garlic 2 tsp
Garlic 2 tsp
All spices powder 1 tsp
Crushed red chili 10 tsp
Green chilies 2
Green coriander ½ bunch
Lemon juice 4 tbsp
Red chili powder 1 tsp
Garlic paste 1 tsp
Oil ½ cup
Salt 1 tsp
Lemon 1
Salt ½ tsp
Water 2 tbsp
Carom ½ tsp
Salt ½ tsp
Method:
● Cut the liver into cubes and add lemon juice, red chili powder, ½ tsp salt and garlic to it. Let it marinate.
● After this add in a blender onions and tomatoes (already grind) together.
● After this heat oil and add curry leaves and mustard seeds.
● Then add blended tomatoes and onion.
● After this add the rest of ingredients and chicken liver; cook this mixture on low flame and wait until liver chunks are tender and ready to eat.
● Cover the wok with a lid.
● In the end add green chilies, green coriander and serve it.

Dumpukht:
Ingredients:
Beef minced 1 kg
Salt as required
Mint 2 tbsp
Green chilies 2
Onion 1
Yogurt ½ cup
Green coriander ½ cup
Garlic 4 cloves
Ginger 1 inch piece
White cumin 1 tbsp
Water 1 cup
Clarified butter ½ cup
Method:
Apply yogurt and salt on meat then add all spices. Keep in fridge for 5 to 6 hour. Heat clarified butter add meat with 1 cup of water cover and cook. Apply kneaded flour on cover to stop leakage of steam. Cook on low flame for 1 hour. When its ready turn off flame.

Ghee Roast Mutton :
Mutton chops 750 grams
Turmeric ½ tsp
Garlic paste 1 tbsp
Clarified butter ½ cup
Yogurt 1 cup
Curry leaves 10-12
Salt as per taste
Ginger garlic paste 1 tbsp
For Masala
Whole cayenne chili 2-3 large
Whole coriander 1 tbsp
White cumin ¾ tsp
Fennel 5-6
Black pepper 8-10
cloves 4-5
Star anise 1
Whole red chili 6-8
Cinnamons stick 1 piece
Further ingredients:
Ginger 1 medium piece
Garlic 4-5 cloves
Lemon juice 2 tbsp
Salt to taste
Clarified butter 4 tbsp

Method:
• In a frying pan add cayenne chili ,whole coriander,white cumin ,black pepper ,cloves ,star anise ,whole red chili and cinnamon add and roast. Once roasted, grind it all together.
• Heat the clarified butter and add mutton chops,garlic paste and turmeric and add the roast chops that are already boiled.
• Then cook till meat tenders.
• After this, add ginger, garlic,salt and lemon juice add and then grinded the masala.
• Then add cook mutton chops and yogurt mix.
• Finally add curry leaves and lemon juice.
• Mix it and serve hot.
