Lemon pistachio cookies :
Ingredients
Flour 1 ¾ cup
Baking powder 1 tsp
Salt ½ tsp
Butter ½ cup
Sugar ½ cup
Honey 1/3 cup
Hung curd 3 tbsp
Lemon zest 1 tsp
Lemon juice 1 tbsp
Pistachios chopped ¼ cup
Yellow color drops few drops
Icing sugar for dusting
Lemon essence few drops
Icing sugar for dusting
Peanuts handful

Method:
• Sift the flour, salt and baking powder in a bowl.
• Beat butter and sugar until its fluffy.
• Add in hung curd, honey, lemon zest, lemon juice and lemon essence.
• Stir in the flour mixture and pistachios.
• Shape the dough into logs, wrap in a cling film and refrigerate it for a couple of hours until its firm.
• Once the cookie dough is firm, slice into 1-inch size pieces and place on silicon lined baking trays.
• Bake at 180°C for 12 minutes until they’re golden brown.
• Allow it to cool completely.
• Dust over icing sugar and serve.
