Fried Murgh Salan:
Chicken 750 gm
Chopped onion 3-4
Chopped ginger garlic 1 tbsp
Red chili powder 1-1/2 tbsp
Coriander powder 1 tbsp
Turmeric ½ tsp
Chopped tomato 3-4
Curry leaves 8-10
Oil ¾ cup
Chopped green chilies 3-4
Onion diced 1
Fennel powder ½ tsp
Salt to taste
Clarified butter 4 tbsp
Fry onion in ½ cup of oil. Add chopped garlic ginger, salt, chili, turmeric, coriander and tomato fry well. Add fennel powder and chicken stock. Fry chicken in clarified butter. When color comes add fried spiced left for simmer. Heat remaining ghee fry onion, green chilies and curry leaves. Pour on cook chicken and serve.

Methi Matar Malai:
Boiled peas 2 cups
Fenugreek leaves ¾ cup
Cream ½ cup
Butter 2 tbsp
Fenugreek 2 pinches
Salt as required
All spice powder ½ tsp
Cumin powder ½ tsp
Turmeric 2 pinches
Ingredients for Masala:
Onion 1
Cashew 6-7
Green chilies 3-4
Ginger 1 piece
Cardamom 2 (small)
Butter 2 tbsp
To prepare masala, heat butter and fry onion. Add green chilies, ginger, cashew and cardamom, cook well. Add ½ cup of water blend well. Heat butter in a separate pan add all spice, turmeric, salt and cumin cook well. Add boiled peas and fenugreek leaves mix well. Add ½ cup of water, cream, all spice and fenugreek cook till becomes thicken. Dish out and serve immediately.
